The restaurant by Andreas Caminada at Schloss Schauenstein is a truly exceptional experience. The first time I was there I did enjoy it, but this visit really blew me away. Given the seasonality of a lot of the ingredients, my recommendation would be that spring/summer is the preferred time to go.

I loved every dish and one of the most fun parts was the three tiered cheese cart, of all Swiss cheese, served with maluns, gschwellti (potatoes), and more.

A side note – if you’re staying at the hotel, my favorite room so far as been the Suite Viamala. It’s in the building opposite the castle but the entire bathroom area has its own floor.

Also, the egg benedict on the breakfast menu is really amazing. Gault Millau has the recipe if you’re interested / inspired.

Next to Schloss Schaunstein is Casa Caminada, which is a hotel and more casual restaurant that serves food from and inspired by Graubünden. I have yet to eat here but there’s also a small bakery and shop here that sells some really great bread as well as regional Bündner specialties and items made in-house by Atelier Caminada, definitely worth a stop as everything I’ve had from here was delicious.
